01 · Fresh pasta
Made by hand.
Every day.
Flour and eggs. The pasta is rolled every day, giving the hands time to find the right thickness. Then come tortellini, tagliatelle and tortelloni.
The hand.
Some gestures are learned by watching: rolling, folding, closing. Hands repeat them every day, without hurry and without shortcuts.
The broth.
Broth takes time. It starts early, simmers slowly and waits for the tortellini. Then it reaches the table in the tureen, as hot as it should be.
The fire.
The fireplace is lit early. Wood, live fire and embers give the meat aroma, warmth and character.
The dessert trolley.
Desserts arrive whole on the trolley. They are seen, described and chosen at the table, because pleasure begins before the first taste.
